Chelow kabab (pronounced che-low ka-bab) is a super popular and yummy dish from Iran. It's made with fluffy steamed rice (called chelow) and different kinds of delicious Iranian kebab. Many people think it's the national dish of Iran. It might have been invented a long, long time ago during the time of the Qajar dynasty, which was a royal family that ruled Iran.
Chelow kabab comes with tasty extras like butter, a special spice called sumac, fresh basil, onions, and grilled tomatoes. People often drink doogh with it. Doogh is a traditional Iranian drink made from yogurt, sometimes with bubbly water.
In old markets, called bazaars, the rice and extras are served first. Then, the kebabs come right after. The kebabs are usually on long metal sticks called skewers. A piece of flat bread, like lavash, is also served. The skewer is placed right on the rice. While holding the kebab down with the bread, the skewer is quickly pulled out. This makes sure all the yummy kebab stays on your plate!

Types of Chelow Kabab
There are many different kinds of kebabs you can have with your chelow. Here are some popular ones:
Kabab Barg
Kabab barg is a fancy kebab made from marinated meat. It can be lamb, chicken, or beef. The most popular kind uses tender filet mignon beef. It's usually grilled until it's perfectly cooked.
Kabab Koobideh
Kabab koobideh is a very common Iranian kebab. It's made from ground meat, like lamb, beef, or chicken. Often, it's mixed with fresh parsley and chopped onions. This gives it a special flavor.
Jujeh Kabab
Jujeh kabab is all about chicken! It's made from grilled chunks of chicken. Sometimes it has bones, and sometimes it's boneless. It's a favorite for many people.
Soltani
The word soltani means "in the style of a sultan." A soltani plate is a special combo. It usually has both kabab barg and kabab koobideh served with rice. It's like getting two delicious kebabs in one meal!
Shah Abbasi
Shah Abbasi means "in the style of a shah." A shah was a king in Iran. This combo plate is even bigger! It typically includes kabab barg, kabab koobideh, and jujeh kabab, all served with rice. It's a feast fit for a king!
