Coronation chicken is a tasty dish made from cold, cooked chicken meat. It's mixed with herbs, spices, and a creamy sauce that uses mayonnaise. You can enjoy it as a salad or use it to fill sandwiches.
What is Coronation Chicken?
Coronation chicken usually has a bright yellow color. This color and its flavor come from curry powder or curry paste. Some recipes use fresh herbs and spices. They might also add other ingredients like flaked almonds, raisins, or a creamy dairy product called crème fraîche.
The very first recipe for Coronation chicken used dried apricot instead of raisins. It also called for curry powder. This was because fresh Indian curry spices were very hard to find in Britain after World War II.
How it Was Invented
Coronation chicken was created for a very special event. It was made for the banquet of Queen Elizabeth II's coronation in 1953.
Two talented women, Constance Spry and Rosemary Hume, invented the dish. Constance Spry was a famous English food writer and flower arranger. Rosemary Hume was a chef. They both worked at the Cordon Bleu Cookery School in London. They came up with the idea of cold chicken with a creamy curry sauce. This dish later became known as Coronation chicken.
A similar dish might have inspired Coronation chicken. This earlier dish was called jubilee chicken. It was made for the silver jubilee of King George V in 1935. That dish also mixed chicken with mayonnaise and curry. Later, for Queen Elizabeth II's Golden Jubilee in 2002, another special dish was created. It was also called Jubilee chicken.
