Later, in 1824, another baker named Duncan Higgins changed the recipe a bit. He used the same special currants from Zakynthos. He made his new bun in his bakery on Fulham Road in London. This area was very fashionable, and his bun became known as the classic Chelsea bun.
Today, the family of Mr. Higgins still celebrates his baking success. Every year in February, they hold a Chelsea Bun festival. It's a fun way to remember his delicious creation!
