The Story of Dahibara Aludum
This famous snack first came from a place called Bidanasi in old Cuttack. People say that street vendors near Barabati Fort were the first to sell it. From there, it quickly became popular all around Cuttack and then spread across the entire state of Odisha. Today, it's enjoyed throughout India. In 2020, it even won an award at the National Street Food Festival in New Delhi!
How is Dahibara Aludum Made?
Making Dahibara Aludum involves a few steps:
- First, urad lentils are washed and soaked in water overnight.
- Then, they are ground into a smooth batter.
- Small balls of this batter are deep-fried in hot oil to make the vadas.
- After frying, the vadas are briefly put in plain water.
- Next, they are moved to a light yogurt sauce. This sauce is often flavored with mustard seeds and curry leaves. The vadas soak in this yogurt for about 3 to 5 hours, making them soft and tangy.
- Finally, the soaked vadas are served with spicy Aludum (potato curry) and Ghuguni (pea curry).
- To make it even better, chopped onion, cucumber, and sprinkles of other Indian snacks are added on top.
