Danbing (dànbǐng) (simplified Chinese: 蛋饼; traditional Chinese: 蛋餅; pinyin: Dàn bǐng; Pe̍h-ōe-jī: nn̄g-piánn; lit. 'egg pancake'; Mandarin pronunciation [tânpìŋ]), also known as egg pancake or rolled egg crepe, is a super popular Taiwanese breakfast dish. It's different from regular pancakes or Chinese jianbings.

Danbing is made from a thin dough. This dough is mixed from flour, potato starch, glutinous rice flour, and water. An omelet is then cooked right on top of the dough! In Taiwan, you can find Danbing almost everywhere. It's mainly sold at breakfast shops, restaurants, and busy night market food stalls. You can even buy it frozen in supermarkets to make at home.

The Story Behind Danbing

Like many other Taiwanese dishes, the idea for Danbing came from mainland China. This happened after a big war ended in 1949. Over time, the dish changed to fit what local Taiwanese people liked. It has now become a special Taiwanese breakfast and a symbol of Taiwanese food.

One big change was adding sweet potato powder to the dough. This makes the Danbing extra chewy, which Taiwanese people call "Q". This chewy texture became a key part of Taiwanese Danbing. However, people in different parts of Taiwan like different textures.

In northern Taiwan, the dough is fried quickly with high heat. This makes it crispy. But in southern Taiwan, people prefer a soft and chewy texture. The seasoning there is also a little sweeter. Recently, Danbing has also become popular in the United States!

What Kinds of Danbing Can You Find?

There are many ways to make Danbing, and lots of different fillings you can add. Sometimes, other ingredients are mixed in with the egg. These can include tuna chunks or minced pork.

In Taiwan, Danbing is often served with tasty sauces. These include soy sauce or sweet chili sauce.
