The Story Behind This Famous Recipe
Who Invented It?
The person who led the team that created the green bean casserole was Dorcas Reilly (1926–2018). She worked in the home economics department at Campbell's. Her job was to come up with new recipes using Campbell's products.
How the Recipe Was Born
The idea for the green bean casserole was simple: to make a quick and easy dish. It used two ingredients that many American homes had in the 1950s: green beans and Campbell’s Cream of Mushroom Soup. The recipe was first called "Green Bean Bake."
At first, the dish wasn't very popular within the company. But Dorcas Reilly believed in it! Over time, it became known as a comforting and delicious food.
The Role of Cream of Mushroom Soup
Campbell’s Cream of Mushroom soup was first made around 1934. It became very popular in the Midwest for making casseroles. Some people even called it "Lutheran binder" because it was used so much to hold casserole ingredients together!
Dorcas Reilly's recipe made the combination of this soup with green beans famous. Today, Campbell's Soup estimates that 40 percent of all the Cream of Mushroom soup sold in the U.S. is used to make green bean casserole.
A Place in History
In 2002, Dorcas Reilly gave the original recipe card for the green bean casserole to the National Inventors Hall of Fame in Akron, Ohio. This shows how important and well-known her creation became! She passed away on October 15, 2018, in her hometown of Camden, New Jersey.
