History of Pingqiao Tofu

A rich local man named Lin Baiwan wanted to impress the emperor. He decorated the road to his home with lanterns and colorful flags. Then, he invited the emperor to his house. While Lin Baiwan served special local tea, his cook was busy. The cook was making a special tofu dish for the emperor. It had rich chicken broth and other ingredients.
When the dish was ready, a wonderful smell filled the house. The emperor had eaten many fancy foods before. But he loved this tofu dish so much! He even called it "the best food in China." Since that day, Pingqiao tofu has become one of the most famous Huaiyang dishes.
How Pingqiao Tofu Became Famous
For over 200 years, Pingqiao tofu has been well-known. Many great chefs have made it even better. In 1984, the Chinese government served this dish to important guests from Japan and America. Everyone loved it!
In 1986, representatives from 11 different countries tried it. They were all very happy with the taste. This famous dish was even written about in big newspapers like People's Daily.
Pingqiao tofu was also a favorite food of Zhou Enlai. He was a very important leader in China. Another leader, Hu Yaobang, also praised Pingqiao tofu. He even suggested that a Huaiyang restaurant should open in Beijing. This special dish is now recorded in the "Chinese Dishes Canon." This means it's officially recognized as an important Chinese dish.
