Tofu (豆腐), sometimes called doufu or bean curd, is a food made from soybeans. It's created by turning soy milk into curds, much like how cheese is made from milk. These curds are then pressed into blocks. Sometimes, another food called seitan (made from wheat) is mistakenly called "tofu" in some dishes.

It's believed that the way to make tofu came from China many centuries ago. One of the earliest mentions of tofu in Japan is in a diary from the Nara Kasuga Taisha shrine in 1183, during the Heian period.
