How Jellied Veal Is Made

Next, these small pieces of meat are mixed with the cooking broth. This mixture is then poured into a container and left to cool down. As it cools, the broth turns solid, like jelly. This process is called congealing, and it holds all the meat pieces together in a firm, delicious block.
