Judd mat Gaardebounen
Judd mat Gaardebounen is a famous dish from Luxembourg.

Judd mat Gaardebounen is a very popular and tasty dish from Luxembourg. It's considered one of the country's national dishes! This meal features smoked pork (usually a part called pork collar) and special beans known as broad beans. It's a savory, hearty meal that many people in Luxembourg enjoy.

The dish is especially linked to a village called Gostingen. People from Gostingen are sometimes nicknamed Bounepatscherten, which means "broad bean patchers," because their broad beans are so well-known.

How to Make Judd mat Gaardebounen

Making this dish involves cooking the pork and the broad beans separately before bringing them together.

Cooking the Pork

First, the smoked pork collar needs to be soaked in water overnight. This helps to remove some of the saltiness.

After soaking, the pork is boiled. Any foam that rises to the top should be removed. Then, you let the pork gently cook (simmer) for about two hours. While it simmers, you add vegetables like leeks, carrots, and celery, along with cloves. A special bundle of herbs called a bouquet garni is also added for flavor. Sometimes, a glass of Moselle wine is included too.

Preparing the Broad Beans

The broad beans are first quickly boiled in water for about 5 minutes. This is called blanching.

While the beans are blanching, a delicious sauce is made for them. You start by browning chopped onion and small pieces of bacon in butter in a pot. Then, you stir in some flour. After that, meat broth is added and stirred until the sauce is smooth and a bit thin. This sauce then simmers for about 20 minutes.

Finally, the blanched broad beans are added to the sauce. Fresh, finely ground savory herb, pepper, and salt are mixed in to give the beans their final flavor.

Serving the Dish

Once the pork is fully cooked, it's taken out of its broth and sliced. The slices of pork are then placed on a large plate next to the flavorful broad beans.

Judd mat Gaardebounen is often served with boiled potatoes. People usually enjoy it with a glass of wine or a refreshing beer.

Where Did the Name "Judd" Come From?

The exact origin of the word "judd" in the dish's name isn't fully clear. One idea comes from a language expert named Jean-Claude Muller. He thinks it might come from the Spanish word for bean, which is judía.

In a region of Spain called Galicia, there's a pork dish served with broad beans that is locally called judia. It's pronounced a bit like "shu-DI-a." Muller suggests that this dish might have been brought to Luxembourg by Spanish troops a long time ago, possibly in the 1500s or 1600s. If this is true, then "Judd mat Gaardebounen" would actually mean something like "Beans with Broad Beans"!
