• Slow and Low: This means cooking food slowly over low, indirect heat. When you do this, you can add special rubs and wood chips to give the food a deep, smoky flavor that you can't get from an oven.
• Hot and Fast: This is for quick grilling with very high heat. A barbecue gets much hotter than a stovetop. This high heat helps you get that amazing charring and searing on your food, just like you see in fancy restaurants!
