Lomo saltado is a very popular and traditional Peruvian meal. It's a type of stir-fry dish. It usually has tasty strips of beef, like sirloin, mixed with onions, tomatoes, and french fries. It's often served with rice. This dish first came from the "chifa" tradition, which is how Chinese food mixed with Peruvian cooking. What is Lomo Saltado?
This yummy dish is usually made by first soaking strips of beef in a mix of vinegar, soy sauce, and different spices. Then, these beef strips are quickly cooked in a hot pan or wok with red onions, parsley, and tomatoes. Sometimes other ingredients are added too.
Lomo saltado is special because it uses both potatoes and rice. Potatoes first came from Peru, and rice came from Asia. Using both shows how different cultures have blended together in this dish.
A Mix of Cultures
In 2013, a chef named Martin Morales wrote about lomo saltado. He said it was "one of Peru's most loved dishes." He also explained that the dish "shows the rich fusion of old and new worlds." This means it mixes old Peruvian ways with new ideas from other places.
Chef Morales mentioned that the juicy mix of beef, onions, tomatoes, aji Amarillo paste, and soy sauce is cooked in a large pan or wok. He said this dish is one of the many good things that Chinese people brought to Peru when they moved there. He also called lomo saltado a favorite "Chifa" dish, which means it has strong Peruvian-Chinese roots.
The word saltado means "stir-fry" in Spanish. It comes from a French word that means "to jump." Stir-frying is a cooking method that came from China. Because of this, dishes called saltado in Peru are known to have a Chinese cooking influence.
Many Chinese workers came to Peru a long time ago, between 1849 and 1874. They helped to build the country. Over time, many of these Chinese Peruvians opened restaurants. By 1921, these restaurants became known as Chifa. This is why Chinese cooking styles became a part of Peruvian food.
