Lorighittas are a special type of pasta from Sardinia, an island in Italy. Their name means "small rings" in the local Sardinian language. This pasta comes from a small village called Morgongiori, located near a mountain called Monte Arci. Lorighittas are so unique that they are officially recognized as a "traditional food" in Italy. This means they have a special label called P.A.T., which helps protect and promote traditional Italian foods. People often enjoy Lorighittas with free-range chicken and tomato sauce, or just with a simple tomato sauce.

How Lorighittas Are Made

Making Lorighittas is a special process done entirely by hand. First, a double string of dough is twisted. This dough is made from semolina flour and water. The twisted dough is then carefully braided between the fingers. This creates a closed ring shape. The Sardinian word for this ring is loriga.

Traditionally, families made this pasta for the feast of All Saints' Day. It takes a lot of time and skill to make Lorighittas. One person can spend about three to four hours just to make one kilogram of this unique pasta!

Promoting Lorighittas

In recent years, the local government in Morgongiori has worked hard to share Lorighittas with more people. They have created plans to promote this special pasta. Lorighittas have been shown at important events and food fairs. These include the Terra Madre Salone del Gusto and a festive salon in Lugano.

For over ten years, the town has also hosted a special Lorighittas festival. This event happens in the first week of August. Visitors can enjoy a free tasting of the famous pasta. This festival is very popular. Thousands of people visit the small town at the foot of Monte Arci to take part in the celebration.
