Makhan Bada is a delicious traditional dessert from Rajasthan, a state in India. It's also known as Balusaahi. This sweet treat is a bit like a glazed doughnut because it uses similar ingredients. However, it has its own special texture and taste.
Makhan Bada also looks a little like another Rajasthani dish called Baati in size. But its shape is more like a Medu vada. In the southern parts of India, a very similar pastry is called badusha.

How Makhan Bada is Made
Makhan Badas are made from maida flour, which is a type of all-purpose flour. First, a firm dough is prepared using this flour, some ghee, and a little baking soda.
Shaping and Frying
Once the dough is ready, small discs are shaped by hand. These discs are about 25 mm across and 1⁄2-inch-thick (13 mm). After shaping, they are deep-fried until golden brown. This frying happens in hot ghee or oil.
Sweet Coating
After frying, the warm Makhan Badas are immediately dipped into a thick sugar syrup. This syrup creates a sweet, shiny coating all over the pastry. The result is a very sweet and tasty dessert with a slightly flaky texture.
