Baati is a special kind of hard, round bread. It's popular in parts of India, especially in Rajasthan. People also enjoy it in Madhya Pradesh and Gujarat. This bread is great because it stays fresh for a long time. It also needs very little water to make, which is helpful in desert areas.
Baati is often eaten with a lentil soup called dal. That's why it's sometimes called dal baati. In Madhya Pradesh, it can also be served with a mashed roasted eggplant dish called bharta. Baati is similar to another bread called Litti (cuisine), which is popular in eastern Uttar Pradesh and western Bihar. Litti is usually eaten with potato, tomato, and roasted eggplant.
Baati can be plain or have tasty fillings. These fillings might include onions, peas, or a special flour called sattu. Bafla is a softer version of baati. Both bafla and baati are always enjoyed with hot dal, lots of pure ghee, and spicy chutney.
Churma is a sweet treat often served with baatis and dal. It's made from coarsely ground wheat. This wheat is cooked with ghee (clarified butter) and sugar. Traditionally, it's made by mashing up leftover baatis or flatbreads (rotis). Dry fruits and different flavors can be added too. You can eat churma by itself or with dal.
What is Dal-Baati-Churma?
Dal-baati-churma is a very popular meal in Rajasthan. It combines three main dishes: dal, baati, and churma. It's a complete and satisfying meal!
The dal is usually a mix of five different lentils. The baati are small, round wheat bread balls. Baati is dipped in pure ghee and served hot. The dal often comes with a spicy red chili topping. It's also served with spicy garlic chutney or a gram flour (besan) sauce.
To eat it, people traditionally mash up the baati and pour ghee over it. This delicious meal is a favorite at all kinds of celebrations. You'll find it at religious events, weddings, and birthday parties across Rajasthan.
What is a Dal-Baati Thali?
A traditional Rajasthani meal plate, called a thali, often includes baati. Besides dal and baati, a thali might have other dishes. These can include besan gatte (dumplings made from gram flour), boondi rayta (yogurt with small fried chickpea balls), garlic chutney, paapad (crispy flatbread), kadhi (a yogurt-based curry), and mango pickle.
In Madhya Pradesh, Dal-Baati is also served with other tasty dishes. For example, Baingan ka Bharta is a mashed eggplant dish cooked over fire with spices. Fried potatoes are another common side. Kadhi, made with gram flour and buttermilk, is also eaten with Dal-Baati. It adds a liquid part to the meal and helps balance the flavors.
Gatte ki Sabzi, a spicy dish made from gram flour and spices, is also popular. It adds a nice spicy kick to the whole thali.
Mango pickle and green chutney are important parts of the thali. Green chutney is made with coriander, lemon, tomatoes, and spices. In western Madhya Pradesh, especially in the Malwa region, sweet rice is also served. This rice is cooked with saffron, sugar, and cloves, making it a sweet addition to the meal.
