Pancake is a very small, unincorporated community located in Coryell County, in the U.S. state of Texas. An unincorporated community means it's a group of homes or businesses that isn't officially part of a city or town. According to the Handbook of Texas, only about 11 people lived there in 2000. It is part of the larger Killeen-Temple-Fort Hood metropolitan area.
The Story of Pancake
The community of Pancake got its interesting name from its first postmaster, John R. Pancake. Before that, it was known as Bush. Pancake had its own post office from 1884 until 1908, with only a short break. Today, mail for Pancake is delivered from the nearby town of Jonesboro.
In 1896, Pancake was a bit bigger, with about 200 people living there. It had a general store where people could buy everyday items. There was also a flour mill to grind grain and a gin, which was likely for processing cotton. However, the population started to shrink over time. By the 1930s to the 1960s, only about 25 people lived there. This number dropped even further to just 11 residents by the year 2000.
Where is Pancake?
Pancake is located in northern Coryell County, Texas. You can find it where two roads, Farm to Market Road 217 and Farm to Market Road 2955, meet. It is about 13 miles (21 km) northwest of Gatesville, which is the county seat of Coryell County.
