Paola's Early Life and Career
Paola was born in Argentina. She was the only child in her family. Her grandparents on both sides came from Italy. Her father, Roberto Carosella, was a photographer and also a racing driver. Her mother, Irma Polverari, was a successful lawyer.
Paola learned to cook from her grandmothers. They even grew and harvested the food they cooked! After finishing high school, she started working in restaurants in Buenos Aires, Argentina.
Paola became very well-known as a judge on the TV show MasterChef Brazil. She judged alongside Brazilian chef Henrique Fogaça and French chef Érick Jacquin. Later, another Brazilian chef, Helena Rizzo, took her place.
On November 7, 2016, Paola released her first book. It was called Todas as sextas, which means Every Friday. The book shared stories from her life and some of her favorite recipes.
Paola has a daughter named Francesca, who was born in 2011.
Paola's Cooking Journey
Paola worked with a famous Argentine chef named Francis Mallmann. After that, she traveled to Paris, France. There, she worked in several well-known restaurants like Le Grand Véfour and Le Bristol. She also cooked in restaurants in California, United States, and Uruguay.
In 1994, she moved to Mendoza, Argentina. She worked at the Patagonia West restaurant in New York City.
Opening Restaurants in Brazil
In 2001, Paola was invited to move to São Paulo, Brazil. She helped open and manage the kitchen of a restaurant called A Figueira Rubaiyat. She worked on this project with Francis Mallmann and Belarmino Fernandez Iglesias.
