About Paola Carosella
Paola was born in Argentina. She was the only child in her family. Her grandparents on both sides came from Italy. Her father, Roberto Carosella, was a photographer and racing driver. Her mother, Irma Polverari, was a successful lawyer.
Paola learned to cook from her grandmothers. They grew and harvested the food they prepared. After finishing high school, she started working in restaurants in Buenos Aires. Paola used to be a judge on the TV show MasterChef Brazil. She judged alongside Brazilian chef Henrique Fogaça and French chef Érick Jacquin. Later, Brazilian chef Helena Rizzo took her place.
On November 7, 2016, Paola released her first book. It is a mix of her life story and a collection of recipes. The book is called Todas as sextas, which means "Every Friday." She has a daughter named Francesca, who was born in 2011.
Paola's Cooking Journey
Paola worked with Argentine chef Francis Mallmann early in her career. After that, she traveled to Paris and worked in famous restaurants. Some of these included Le Grand Véfour, Le Celadon, and Le Bristol. She also cooked in restaurants in California, United States, and Uruguay. In 1994, she moved to Mendoza, Argentina, and worked at the Patagonia West restaurant in New York City.
Opening A Figueira Rubaiyat
In 2001, Paola was invited to move to São Paulo, Brazil. Her task was to help open and lead the kitchen of a new restaurant. This restaurant was called A Figueira Rubaiyat. She worked on this project with Francis Mallmann and Belarmino Fernandez Iglesias.
