What Makes a Pastry Fork Special?
Pastry forks usually have three or four prongs, which are called "tines." If a pastry fork has three tines, one of them is often wider and flatter on the side. This wider tine helps you cut through soft pastries. If it has four tines, the first two might be joined together and also have a special edge for cutting.
Sizes and Types
Pastry forks come in different sizes. Smaller ones, sometimes found in English sets, can be about 4 inches (100 mm) long. Larger ones, used for serving, can be up to 7.5 inches (190 mm) long. In fancy dinner sets, you might even find separate forks for pastries and pies!

Most pastry forks are made for people who use their right hand. The left side of the fork is often wider and has a special edge. This wider part acts like a small knife. You can press it down to cut your dessert while holding the plate with your left hand. If you are left-handed, don't worry! There are also pastry forks made just for you, with the wider cutting edge on the right side.
Who Invented the Pastry Fork?
The pastry fork we use for eating was invented by a person named Francis Higgins in London back in 1886.
You might hear about another "pastry fork" invented by Anna M. Mangin. She received a patent for her invention on March 1, 1892. However, her invention was a tool used for mixing pastry dough, not for eating it. So, while both inventions share the name "pastry fork," they have very different uses!
