Paul Bertolli was born in 1954 in San Rafael, California. His family had Italian roots. He became well-known in the food world at a famous restaurant called Chez Panisse. This restaurant is in Berkeley, California.
Early Career and Famous Restaurants
Paul worked at Chez Panisse from 1982 to 1992. He became the main chef, also known as the executive chef. He even helped write a cookbook called Chez Panisse Cooking with the restaurant's founder, Alice Waters.
After Chez Panisse, he was the main chef at the Oliveto restaurant. This restaurant is in Oakland, California. He worked there until the middle of 2005.
Creating Special Foods
Paul is famous for making special ingredients by hand. These include balsamic vinegar and salumi. Salumi are cured-pork products, like salami and prosciutto.
In March 2006, he started his own food company. It is called Fra' Mani Handcrafted Salumi. The name 'Fra Mani' comes from Italian words meaning 'between or among hands'. It means 'from our hands to yours'.
Paul also wrote a cookbook in 2003. It is called Cooking by Hand: A Cookbook.
