Early Life and Learning
Pedro Subijana started his cooking journey by studying at a hospitality school in Madrid. After that, he went to the Luis Irizar Cooking School in Zarautz. He loved it so much that he later became a teacher there! Before joining Akelarre, he worked as a cook in different places like Tolosa, Hernani, Madrid, and Estella.
A Chef's Amazing Career
In 1975, Pedro Subijana became the main chef at Akelarre. Soon, his restaurant became famous and was listed in important food guides. It also joined special groups like Relais & Chateaux and Les Grandes Tables du Monde, which are for top restaurants around the world.
Pedro believes it's important for everyone to learn about healthy eating in school. He has taught and given talks about cooking in many places across Europe and America.
He also helped start some big cooking movements in Spain. Between 1976 and 1978, he was part of the "New Basque Cuisine." In 1986, he helped create Euro-Toques with other famous European chefs like Juan Mari Arzak. Euro-Toques is an organization that helps chefs share ideas and keep cooking traditions alive. Pedro was even the international president of this group for a while!
Pedro Subijana also helped create the Basque Culinary Center in San Sebastián. This is a special university for people who want to become chefs. He also teaches at the University of Navarre.
