Luis Irizar Zamora (born May 30, 1930 – died December 9, 2021) was a very important chef. He was one of the people who started the New Basque Cuisine movement. This style of cooking is famous for using fresh, local ingredients in new and exciting ways.

Luis Irizar: A Master Chef
His Early Cooking Days
Luis Irizar was born in Havana, Cuba. However, his parents were from San Sebastián, a city in Spain. He felt a strong connection to San Sebastián. He began his cooking career there at the fancy Hotel María Cristina.
During his early years, he also worked in other famous places. These included the Hotel Azaldegui in San Sebastián. He also cooked at the Restaurant Royal Monceau in Paris, France. Later, he worked at the Hilton in London, England.
Opening a Special Cooking School
In 1976, Irizar opened a new school called the Escuela de Hostelería del Hotel Euromar. This school was in Zarautz, Spain. It was the very first catering school in the Basque Country. A catering school teaches people how to cook and manage restaurants.
Over the years, many famous chefs learned their skills at this school. These chefs became leaders in the New Basque Cuisine movement. Some of his well-known students include Karlos Arguiñano, José Ramón Elizondo, Ramón Roteta, and Pedro Subijana.
Later Life and Legacy
After working in Madrid and running his own place, the Restaurante Irizar, he returned to San Sebastián. In 1993, he started another school. This one was called the Luis Irizar Sukaldaritza Eskola, which means "Luis Irizar School of Cooking."
Luis Irizar passed away on December 9, 2021. He was 91 years old. He left behind a great legacy. Many chefs today still follow his ideas and cooking style. He helped make Basque cuisine famous around the world.
