This tasty pastry has a long history. The first time a recipe for Puits d'amour appeared was in 1735. It was in a cookbook called Le cuisinier moderne. This book was written by a chef named Vincent De La Chapelle.

Original Recipes

Chef La Chapelle shared two recipes for this dessert.

  • One was for a large gâteau de puits d’amour. This was a big puff pastry shell. It looked like a bucket from a well, complete with a pastry handle. It was filled with redcurrant jelly.
  • The other recipe was for petits puits d’amour. These were smaller, bite-sized versions of the cake.

A New Filling

Later, a chef named Nicolas Stohrer changed the recipe. He was a pastry chef for the Polish king Stanislas. Instead of fruit jam, he filled the Puits d'amour with vanilla pastry cream. He also covered the top with a thick layer of caramel.

How Puits d'amour is Made

Making a Puits d'amour is a bit like building a tiny tower.

  • First, layers of puff pastry rings are stacked up. They are placed on top of a round pastry base.
  • A little egg yolk can be used to help the dough rings stick together.
  • The pastry "wells" are then baked. They become puffed up and golden brown.
  • After they cool down, they are ready to be filled. Sweet raspberry jam or redcurrant jelly is carefully spooned into the hollow center.
