Before starting Roly Poly, Linda and Julie had already been making rolled sandwiches. They had their own shops in other places. One shop was in New Canaan, Connecticut, which opened in 1986. Another shop was in Key West, Florida, which opened in 1997. After gaining experience, they decided to create a bigger system.
