What is a Rustico?
A rustico is a type of fresh pastry. It's often eaten as an appetizer or a quick snack. The main part of a rustico is its special dough, called puff pastry. This dough is made by folding butter into flour many times, which creates lots of thin layers. When it bakes, these layers puff up, making the pastry light and airy.
What's Inside?
The most common filling for a rustico includes tomato sauce and melted mozzarella cheese. Sometimes, people add a creamy white sauce called béchamel and a little pepper. But there are many different kinds! You might find rustici with spinach and ricotta cheese, or even with a wurstel (a type of sausage).
How is it Made?
To make a rustico, bakers use two round pieces of puff pastry. The bottom piece is usually about 10 centimeters (about 4 inches) wide. The top piece is a bit bigger, around 12 centimeters (about 5 inches). They put the cheese and tomato filling between these two pastry circles. Before baking, the top is brushed with egg. This helps it turn golden brown and shiny in the oven.
