Sate lilit is a special kind of satay from Indonesia. It comes from Balinese cuisine, which is the food style of the island of Bali. This satay is made from finely chopped meat, like pork, fish, chicken, or beef. Sometimes, even turtle meat is used.
The minced meat is mixed with tasty ingredients. These include grated coconut, thick coconut milk, and fresh lemon juice. Other spices like shallots and pepper are also added. This spiced meat is then wrapped around sticks made of bamboo, sugarcane, or lemongrass. Finally, it's grilled over hot charcoal.
What makes sate lilit unique is its stick. Unlike other satay, which uses thin, sharp skewers, sate lilit uses a flat, wide bamboo stick. This wide surface helps the minced meat stick firmly to it. The word lilit in the Balinese and Indonesian languages means "to wrap around." This perfectly describes how this delicious satay is made!
Different Kinds of Sate Lilit
Since Bali is an island where most people follow Hinduism, traditional Balinese sate lilit often uses pork and fish. Beef was not commonly eaten there in the past. However, to make sate lilit enjoyable for everyone, especially for the many Muslim people in Indonesia who do not eat pork, restaurants outside Bali often use chicken or beef instead.
In fishing towns in Bali, like Kusamba village, sate lilit made from minced fish is very popular.
Two favorite satay dishes in Bali are sate lilit and sate ikan (which means fish satay). While fish sate lilit uses minced fish, sate ikan uses chunks of fish meat instead. Both the real Balinese sate lilit and sate ikan are full of bumbu. This is a special mix of spices and herbs. In Bali, almost every dish gets its amazing flavor from bumbu megenep. This mix can include things like lime leaves, coconut milk, garlic, shallots, blue galangal, coriander, turmeric, and chili pepper.
