Sate padang, also known as Padang satay, is a special kind of satay from Padang, a region in Indonesia. It's made with small cubes of beef and a yummy, spicy sauce poured over the top.

The most unique part of Sate padang is its thick, yellow sauce. This sauce is made from rice flour mixed with broth from beef and other parts of the animal, like the liver or heart. It also has many spices such as turmeric, ginger, garlic, coriander, galangal root, cumin, curry powder, and salt.

In some places, like Medan, Sate padang can also be made with chicken, goat, or lamb. In Medan, people often add crispy fried shallots on top. They also serve it with lontong, which is a type of rice cake.

What Are the Different Kinds of Sate Padang?

There are three main types of Sate padang. They are Sate Padang Panjang, Sate Payakumbuh, and Sate Pariaman. You can tell them apart by the color of their sauce!

How is Sate Padang Made?

Making Sate padang takes a bit of time and care. First, fresh beef is boiled twice in a big pot of water. This makes the meat super soft and juicy. After boiling, the meat is cut into smaller pieces. Then, special spices are sprinkled all over the meat.

The broth from boiling the beef is very important. It's used to make the delicious sauce. This broth is mixed with about 19 different kinds of spices. These spices are first ground until they are smooth. Then, they are stirred together with various types of chili. All these ingredients are cooked for about 15 minutes until the sauce is thick and flavorful.

Just before serving, the beef pieces are grilled. They are cooked over hot charcoal made from coconut shells. This gives the satay a wonderful smoky flavor.
