Soki (Okinawan: ソーキ sooki) is a special and tasty dish from Okinawa Prefecture, Japan. It's made from stewed pork spare ribs. These ribs usually have the soft cartilage still attached, which makes them extra tender. Soki is often served with a type of noodle soup called Okinawa soba.

Soki Soba Noodles
One of the most popular ways to enjoy soki is with Okinawa soba noodles. This dish is called Soki soba. The soki ribs are placed right on top of a warm bowl of Okinawa soba.
To prepare the soki for this dish, the ribs are first boiled. This step helps to remove any extra fat. After boiling, the soki is stewed for about three to four hours. It cooks in a mix of awamori (a special Okinawan drink used in cooking to make the meat very soft), soy sauce, and sugar. This long cooking time makes the meat incredibly tender and full of flavor.
Soki Jiru Soup
Soki jiru is a delicious soup that features soki. This soup also includes konbu (a type of edible seaweed) and daikon (a Japanese radish). Salt and soy sauce are added to give the soup its great taste.
Just like with soki soba, the soki ribs are boiled first to remove extra fat. Then, they are stewed directly in the soup until they become very tender. In Okinawa, it's common to leave the konbu seaweed in the soup. This is a unique feature of Okinawan soups, as in other parts of Japan, konbu is sometimes removed after it has added flavor.
