What Was Swank and Swine?
Swank and Swine were found in the Paramount Hotel. This hotel is in downtown Portland, right across from Director Park. People who wrote about food said that both places focused on "Southern-inspired" cooking. This often meant dishes with pork.
The Swank Restaurant Menu
Swank was a restaurant that could seat 84 people. It served a type of food called New American cuisine. This style often mixes different cooking traditions.
Some of the dishes you could find at Swank included:
- Calamari (fried squid)
- A noodle dish with squid ink
- Lamb tartare (raw minced lamb) with feta cheese
- Foie gras (a rich duck or goose liver dish) with gravy and apricots
- Mushroom stroganoff
For lunch, Swank offered sandwiches and different kinds of pasta. They also had Shrimp Louie salad and duck confit (slow-cooked duck).
The Swine Bar Experience
Swine was a bar with a special theme. It was designed to look like a place from the Prohibition Era in the United States. During that time, making and selling alcohol was against the law. The bar had a unique look, mixing old-fashioned Western style with a simple, clean design.
The menu at Swine included smaller dishes like:
- Pigs in a blanket (sausages wrapped in pastry)
- Short ribs
- Fried chicken sliders
- Crab wontons
- Collard greens
- Bacon cheesecake
The bar also served many different drinks. Some of these had interesting names like the Lion's Tail and the Flu Shot.
History of Swank and Swine
