Veal Orloff is a fancy meat dish that first appeared in the 1800s. It's a part of Russian cuisine, but it was actually created by a French chef! People believe the dish was made by a chef named Urbain Dubois. He worked for Prince Orloff, who used to be Russia's ambassador to France.
What is Veal Orloff?
This special dish uses a piece of veal loin that is slow-cooked until it's very tender. The veal is then sliced thinly, but not all the way through. Between each slice, a thin layer of finely chopped mushrooms and onions is added. Think of it like a delicious filling!
After the filling is added, the veal is carefully put back together into its original shape. Then, it's covered with a creamy cheese sauce called Mornay sauce. This sauce is a type of white sauce mixed with cheese. Finally, the whole dish is baked in the oven until it's golden brown and bubbly.
"French-Style Meat" Today
Today, similar dishes are very popular in Russia. They are often called French-style meat (myáso po-frantsúski). In these modern versions, people often use different kinds of meat. Instead of veal, they might use cheaper meats like beef or pork.
Also, the creamy Mornay sauce is sometimes replaced with mayonnaise. Many times, a layer of sliced potatoes is added to the dish too. This makes it even heartier and a bit different from the original fancy Veal Orloff.
