Yellowman or yellaman is a super chewy and crunchy candy from Ulster, a northern part of Ireland. It's a bit like honeycomb candy, but it has its own special texture.

What is Yellowman?

Yellowman is sold in unique, uneven pieces. You can find it at the famous Ould Lammas Fair in Ballycastle, County Antrim. This fair is a big event where Yellowman is sold alongside other sweets and even dulse, which is a type of seaweed!

Yellowman is similar to regular honeycomb candy. However, Yellowman often has a thicker, harder outer layer, almost like a hard candy called "rock." This hard part makes it extra fun to chew!

How is Yellowman Made?

Making Yellowman needs a lot of heat! The mix of golden syrup and sugar must get very hot, around 149°C (300°F). This high temperature is called the ‘hard-crack’ stage. At this point, the sugar mixture becomes brittle and breaks easily when it cools down.

The candy gets its unique bubbly and crunchy texture from a special reaction. When vinegar and baking soda are added, they fizz up. This creates lots of tiny carbon dioxide gas bubbles throughout the mixture. These bubbles are what make Yellowman so light and airy inside.

What's in Yellowman?

The main ingredients for Yellowman usually include brown sugar, golden syrup, butter, vinegar, and bicarbonate of soda (which is baking soda). But, just like many traditional recipes, different places and families might have their own secret ingredients or ways of making it!
