The main ingredients for Arroz Caldoso are always a flavorful broth (like chicken or vegetable broth), garlic, onions, and short-grain rice. Many recipes use onions that have been cooked until they are sweet and brown, called caramelized onions. Sometimes, a small amount of lentils are added. These help make the dish thicker and add even more flavor.
