How Bruxie Began
Bruxie was created in 2010 by two people, Dean Simon and Kelly Mullarney. They opened their very first restaurant in a city called Orange, California. People loved the food right away! The restaurant quickly became famous for its delicious and different menu.
Growing Popularity
In 2011, just a year after opening, Bruxie was named one of the most popular restaurants in the entire country by Yelp. This showed how much people enjoyed their special waffle sandwiches. It was a big achievement for a new restaurant.
Expanding Across the Map
After its success in California, Bruxie started to open new locations.
- In March 2014, Bruxie opened its first restaurant outside of Southern California. This new spot was in Glendale, Colorado. However, this location closed in January 2015.
- In April 2016, Bruxie opened a restaurant in Las Vegas, Nevada. This location was part of a big entertainment area called The Park.
- In August 2017, Bruxie even opened its first international restaurant. This was in Seoul, South Korea, inside the Lotte World Mall.
Plans for More Restaurants
Around 2019, Bruxie started making plans to let other people open their own Bruxie restaurants. This process is called "franchising." They had agreements for more than 18 new locations. These were planned for California, Colorado, Alabama, Georgia, and Florida.
Facing Challenges and Adapting
Like many businesses, Bruxie faced challenges. In March 2020, the company temporarily closed all its Southern California restaurants. This was in response to the global health situation at the time. However, Bruxie didn't stay closed for long. By October 2020, their Orange and Brea locations reopened. They were under new ownership, ready to continue serving their famous waffle sandwiches.
