The Story of Cambozola

Cambozola was created around 1980 by a large German company called Hofmeister-Champignon. They officially protected their invention, meaning they were the first to make and sell it to the world. Champignon still makes this cheese today. In countries where English is spoken, Cambozola is often called blue brie because it looks and feels a bit like Brie, but with blue veins.

How Cambozola Gets its Flavor

Cambozola gets its special taste from two types of mold (which are tiny fungi). One is called Penicillium camemberti, which is also used to make Camembert cheese. The other is Penicillium roqueforti, the same mold that gives Gorgonzola, Roquefort, and Stilton their blue veins.

To make Cambozola extra creamy, more cream is added to the milk. This gives it a rich texture, similar to other "triple cream" cheeses. The outside of the cheese has an edible, soft white skin called a bloomy rind, just like Camembert. Cambozola is much milder than strong blue cheeses like Gorgonzola piccante. It has a smooth, creamy feel and a gentle blue flavor that isn't too strong.

The name "Cambozola" is a clever mix of two other cheese names: Camembert and Gorgonzola. This makes sense because Cambozola tastes like a combination of both!
