Early Life and Learning to Cook

Daniel Rose was born in Wilmette, Illinois, in the United States. He moved to France to study at the American University of Paris. While there, he discovered his love for cooking. He spent a year learning at the famous Institut Paul Bocuse in Lyon, France. Daniel also trained with top chefs at places like the Bruneau Restaurant in Brussels and the luxurious Hotel Meurice in Paris. These experiences taught him a lot about fine dining.

Opening Restaurants in Paris

After his training, Daniel Rose started his own restaurants.

Spring: A Fresh Start

In 2006, Daniel opened his first restaurant, Spring, in Paris. It was a small place with only 16 seats. People loved it right away! Famous food guides like the Michelin guide and newspapers like Le Figaro gave it great reviews. Daniel's idea was to use fresh, seasonal ingredients. He wanted to cook for small groups to create a calm and special dining experience. In 2010, Spring moved to a much bigger spot near the famous Louvre museum. His wife, Marie-Aude Mery, also became a co-chef there.

La Bourse et La Vie: Classic French Food

In 2015, Daniel opened his second restaurant in Paris, called La Bourse et La Vie. This restaurant had 29 seats and focused on classic French bistro food. It was located near the Paris Bourse and the Palais-Royal.

Helping Others: Le Borscht et La Vie

In 2022, Daniel Rose did something special at La Bourse et La Vie. For a short time, he changed its name to Le Borscht et La Vie. He hired three people who had come from Ukraine. They helped create a special Ukrainian menu. Part of the money earned was given to charities. These charities helped people affected by the war in Ukraine.

Chez La Vieille: A Historic Spot

In 2016, Daniel also took over a historic restaurant in Paris called Chez La Vieille. This restaurant had been closed for several years. Daniel brought it back to life, offering traditional French dishes.

Expanding to New York City

Daniel Rose also brought his cooking talents to the United States.

Le Coucou: A New York Success

In 2016, Daniel teamed up with Starr Restaurants. Together, they opened his first American restaurant, Le Coucou, in SoHo, Manhattan, New York City. Le Coucou quickly became very popular. In 2017, it won a big award called the James Beard Foundation Award for Best New Restaurant in the whole country! In 2018, Le Coucou was even named one of The World's 50 Best Restaurants.

Moving On

In 2017, Daniel Rose decided to close Spring after ten successful years. He continued to run La Bourse et La Vie and Chez La Vieille in Paris. However, he made his main home in New York City, focusing on Le Coucou.
