In 1855 and 1856, a man named Noah Barker divided the land into 142 sections. Each section was about 160 acres. This plan helped decide how the town would be laid out. Easton officially became a town in 1865. At first, the economy grew slowly. Records from 1862 show that people could pay their taxes with grain or wooden shingles. The first store opened in 1863. Later, a factory to make starch was built in 1877. A steam-powered mill for shingles opened in 1879.
Easton soon became famous for growing many potatoes. It was called "one of the greatest potato producing towns in the County." In the 1880s, different church groups like the Methodists and Free Will Baptists started in Easton. The Odd Fellows, a friendly society, also appeared. By 1880, the population had grown to 835 people. By 1890, there were 978 residents.
