Grain Valley was started in the late 1870s. The city got its name because the area was known for growing a lot of grain. A post office opened in Grain Valley in 1879.

The city was mainly founded by people and business owners from a nearby community called Pink Hill, Missouri. They moved to this new spot after the Chicago and Alton Railroad built a railway through the area in 1878.
