Gwapyeon (Hangul: 과편; Hanja: 果片) is a special Korean dessert. It's a colorful, jelly-like treat made from fruits. People often serve this sweet jelly at big parties called banquets. Long ago, it was even a favorite dessert in the royal court during the Joseon dynasty.
How to Make Gwapyeon
To make Gwapyeon, people choose fruits that are a bit sour and sweet. These fruits also need to have a lot of pectin. Pectin is a natural substance in fruits that helps things turn into jelly.
Some popular fruits for Gwapyeon include:
- Korean cherry
- Chinese quince
- Apricot
- Mountain hawthorn
- Bokbunja (Korean black raspberry)
- Magnolia berry
Making the Jelly
First, the chosen fruits are boiled in water. After boiling, the fruit mixture is strained to remove any solids. This leaves a clear fruit juice.
Next, honey is added to the fruit juice. The mixture is then cooked slowly over low heat for a long time. This helps the pectin in the fruit juice to thicken. Sometimes, other things like starch or agar are added. These are called gelling agents and help the jelly set faster.
Finally, the warm fruit juice is poured into a mold. It cools down and becomes solid, like a firm jelly. Once it's ready, the Gwapyeon is sliced into small, bite-sized pieces. This makes it easy to eat and enjoy!
