Early Life and Cooking Start
Josh Capon went to the University of Maryland. There, he found out he was really good at cooking for his friends. He even got small donations to buy ingredients! This love for cooking led him to transfer to Johnson and Wales University, a special school for culinary arts.
Becoming a Top Chef
Learning from the Best
While at Johnson and Wales, Josh got a great chance. He became a cooking intern for Charlie Palmer. Charlie Palmer is a very famous chef. Josh worked at Palmer's well-known restaurant, Aureole, in New York City. After finishing school in 1994, Josh kept working with Charlie Palmer. He even helped open another restaurant called The Lenox Room.
Josh then worked with another great chef, David Burke, at the Park Avenue Café. To learn even more, he spent a year traveling around Europe. He wanted to make his cooking skills even better!
Leading Kitchens
When he came back, Josh became a sous-chef at The St. Regis Hotel's Astor Court. A sous-chef is like the second-in-command in the kitchen. He worked under Chef Gray Kunz. Later, he worked with Charlie Palmer again. This time, Josh became the executive chef at Alva, which was Palmer's American bistro. An executive chef is in charge of the whole kitchen.
After a few years, he was the executive chef at Matthew's on the Upper East Side. Then, he took over as executive chef at Canteen in SoHo.
Opening His Own Restaurants
Josh Capon teamed up with John McDonald and Josh Pickard. They opened Lure Fishbar in the same spot where Canteen used to be. Lure Fishbar is a fancy restaurant known for its seafood and sushi. This team then opened more popular places. These included Burger & Barrel Winepub, El Toro Blanco, and Bowery Meat Company. They also opened another Lure Fishbar in Miami.
TV Appearances and Awards
Josh Capon is very popular. He has won the People's Choice award seven times at the NYC Wine & Food Festival's Burger Bash. This is a big event where people vote for the best burger.
He has also been on many TV shows. You might have seen him on Rachael Ray, Good Morning America, and TODAY. He has also appeared on the Food Network. Famous magazines and newspapers like The New York Times and New York Magazine have written about him.
New Ventures and Clubs
VCR Group and Flyfish Club
In 2021, Josh Capon started a new company called VCR Group. He co-founded it with Gary Vaynerchuk, Conor Hanlon, and David Rodolitz.
In early 2022, VCR Group worked with Masa Ito and Kevin Kim. They opened ITO, a small 16-seat omakase restaurant in Tribeca, New York. Omakase means the chef chooses what you eat.
Later in 2022, VCR Group started selling special memberships for Flyfish Club. These memberships were sold as NFTs. Flyfish Club was planned as a private dining club. The club started accepting regular cash for memberships in April 2024. Flyfish Club officially opened in September 2024 on the Lower East Side of New York. Josh Capon became a chef at the Flyfish Club in New York in September 2024.
US Open and New Restaurants
Josh Capon has been part of the US Open for many years. He has a special Flyfish pop-up stand there. He serves delicious lobster rolls, oysters, and other popular dishes.
In 2023, VCR Group opened even more restaurants. One was Capon's Burgers, located in the Fontainebleau hotel on the Las Vegas Strip. They also opened Little Maven, a Modern American restaurant in New York City's Flatiron neighborhood.
