Koloocheh (Persian: کلوچه) is a special Persian cookie or bread. It's sometimes called Persian New Year Bread. This tasty treat comes from different parts of Iran.
There are many kinds of Koloocheh. Some are soft and bready, while others are crispy like a biscuit. Some are filled with yummy ingredients, and some are plain. You can find Koloocheh not just in Iran, but also in places like Eastern Europe and North America.
What is Koloocheh?
Koloocheh cookies are often filled with sweet dates and crunchy walnuts. But they can also have grated coconut inside. People often add spices like saffron, rose water, cardamom, cinnamon, or citrus zest to make them extra flavorful.
If you want to make a Koloocheh that is more like bread, especially the kind from the Caspian Sea area, you can make it vegan. This means you can use coconut oil instead of butter.
Koloocheh and Holidays
Koloocheh is an important food for many holidays. Persian Jews enjoy it during Purim. Christians eat it for Easter. Muslims make it during Ramadan.
For Norooz, which is the Persian New Year, Iranians often bake a special Koloocheh bread. In Southern Iran, Koloocheh cookies are usually crispier. They are mostly made from water, sugar, wheat flour, and egg whites.
