Leo is great at mixing old traditions with new ideas in her cooking. She loves to use real Colombian flavors. She also does a lot of research about different parts of Colombia. In 2008, she started the Leo Espinosa Foundation. This foundation helps people in rural areas. It teaches them about food traditions, healthy eating, and how to get enough food.

Her latest cooking project is called BIOMA-CYCLE. It explores different natural areas, or "biomes," in Colombia. Leo and her team work with scientists, farmers, and local people. They find special local ingredients. Then, they create dishes that tell the story of Colombia's food history.

About Leonor Espinosa

Leonor was born on January 12, 1963. Her birthplace was Cartago, in the Valle del Cauca region of Colombia. She is one of six children. Her parents came from Sincé, a town near the Caribbean coast of Colombia. These family roots have greatly influenced Leonor's cooking style.

Leonor spent most of her younger years in Cartagena, Bolívar. There, she studied economics and fine arts. Later, she worked in marketing and advertising. She became very successful in Bogota during the 1990s. But in 1998, Leonor decided to follow her passion for art through cooking. She started learning about traditional Colombian ingredients and cooking methods.

Her daughter, Laura Hernandez Espinosa, is also involved in the food world. Laura studied international relations and is a professional sommelier. This means she is an expert in wine. Laura is a business partner in Leonor's projects. She also helps lead the FUNLEO foundation.

Leonor's Culinary Journey

Leonor first trained in economics, then in advertising and fine arts. She found that cooking was a great way to show her creativity. She worked at a restaurant called Claroscuro in Bogotá. Then, in 2007, she opened her very own restaurant, Leo Cocina y Cava.

Unique Cooking Style

At Leo Cocina y Cava, Leonor developed her special cooking style. She uses traditional ingredients that many people don't know about. These ingredients often come from indigenous, Afro-Colombian, and farming communities in Colombia. Leonor doesn't stick to just one food region of Colombia. Instead, she mixes flavors from all eight regions. She makes authentic Colombian tastes modern and elegant.

She believes her upbringing in Cartagena helped her create this style. Cartagena is a mix of Spanish, African, and native Indian cultures. Leonor sees it as the "birthplace of Colombian cuisine."

Restaurant Recognition

In 2008, The New York Times newspaper said Leonor's cooking was "delicious and peculiar." Leo Cocina y Cava was chosen by Condé Nast Traveller magazine as one of the world's 82 best restaurants. In early 2010, National Geographic Traveler also listed it as one of the 105 best dining experiences globally.

In June 2015, Leonor opened a new, more casual restaurant called Misia. It is located near the National Museum and celebrates Colombian flavors. Leonor has also helped the Colombian government promote Colombia as a great place for food tourism. She has done this at events in Spain and Washington, D.C..

FUNLEO Foundation

Leonor Espinosa started the Leo Espinosa Foundation, also known as FUNLEO. Her daughter Laura helps manage it. The main goal of FUNLEO is to protect Colombia's food traditions. It also promotes sustainable farming and local food production.

This foundation helps Afro-Colombian, indigenous, and farming communities in Colombia. It helps them grow and sell their traditional crops and ingredients. FUNLEO's motto is "Gastronomy for Development." Leonor explains that they focus on local food, not just cooking. They help communities use their own resources and products.

Leonor believes that Colombia's unique food identity has both cultural and economic value. She thinks that by developing food from farms and promoting local products, Colombia can become a top food capital in the world. In March 2013, FUNLEO worked with Oxfam on a project to support sustainable food production in Colombia. They also work with other international groups like USAID.
