Medovik (which means 'honey cake' in Russian) is a super popular layer cake. You'll find it in many countries that used to be part of the Soviet Union. The two most important ingredients are honey and a special kind of sour cream called smetana. Sometimes, condensed milk is used instead of smetana.
This cake is famous for taking a bit of time to make. It has many thin layers of sponge cake. Between these layers is a creamy filling. Often, the cake is decorated with nuts or crumbs made from extra cake pieces. When the thin cake layers first come out of the oven, they are a bit firm. But the creamy filling makes them soft and delicious over time.
What is Medovik?
Medovik is a sweet dessert with a unique honey taste. It's made by baking several very thin cake layers. These layers are then stacked with a rich, creamy filling in between. The honey gives the cake its special flavor and smell.
How is Medovik Made?
Making Medovik involves a few steps. First, the dough for the cake layers is prepared with honey. This dough is rolled out very thin. Then, each thin layer is baked quickly. After baking, the layers are cooled.
Next, a creamy filling is made. This filling often uses smetana (sour cream) or condensed milk. Once the layers are cool, they are stacked one by one. A generous amount of cream is spread between each layer. This process builds up the tall, delicious cake.
A Sweet Story
The story of Medovik began a long time ago in the 1800s. This was during the time of the Russian Empire. A young chef wanted to impress Empress Elizabeth Alexeievna. She was the wife of Emperor Alexander I.
Now, Empress Elizabeth really disliked honey. She would get upset if any dish had it. But this new chef didn't know her secret dislike. He baked a brand new cake using honey and thick sour cream.
To everyone's surprise, the Empress loved the cake! She didn't even realize it had honey in it. This delicious cake became known as Medovik. It became super popular later, especially during the time of the Soviet Union. Today, you can find many different kinds of Medovik. Some use condensed milk, others use buttercream, or a creamy custard.
