Michel Bras: A Culinary Journey
His Unique Cooking Style
Michel Bras is known for his very creative cooking. He loves to use fresh herbs and edible flowers in his dishes. This makes his food not only taste amazing but also look beautiful. He even invented a famous dessert: a chocolate biscuit with a warm, gooey chocolate center.
Expanding His Culinary World
In June 2002, Michel Bras and his son, Sébastien, opened a second restaurant. This new restaurant was located in Japan, at the Windsor Hotel of Hokkaido. The original restaurant in Laguiole was then named Bras Michel et Sébastien, showing their teamwork.
In 2008, Michel Bras started working with a Japanese company called KAI. This company makes high-quality knives. Together, they designed special knives, mostly for professional chefs. This shows how much influence Michel Bras has in the cooking world.
New Ideas and Challenges
In 2014, Michel Bras opened a new restaurant inside the Soulages museum in Rodez, France. He also tried a new idea in Toulouse called "Capucin." This was a special kind of fast-food, described as a "gourmet" version with flavors from the Aveyron region. It won several awards, but it closed in 2016.
A New Path for the Restaurant
In September 2017, Sébastien Bras, with his family's agreement, made a big decision. He chose to give up their Michelin star rating. This meant their restaurant would no longer appear in the Michelin Guide. Sébastien explained that this choice would allow them to cook and create new dishes more freely and calmly.
