Mirza ghassemi (also spelled mirza qassemi) is a yummy Iranian dish. It can be served as a starter (called an hors d'oeuvre) or as a main meal. This special dish is made with eggplant that has been cooked over a fire, like in a tandoor oven or on a grill.

Mirza ghassemi comes from Northern Iran, especially the Gilan area near the Caspian Sea. In many Western countries, people often call it "Persian eggplant dip."

The main ingredients are eggplant, garlic, tomato, oil or butter, salt, and pepper. These are all mixed together and then cooked with eggs. You can make it like a casserole, which is a dish baked slowly in the oven. People usually eat Mirza ghassemi with bread or rice. This delicious dish has an interesting story behind its name! Mirza ghassemi was invented by a man named Mohammad Qasim Khan. He was the governor of a city called Rasht in Iran. This was during the time when Nasser al-Din Shah was the king, which was from 1848 to 1896. Mohammad Qasim Khan created the dish and it was named after him.
