Schiaffino runs a popular restaurant in Lima, Peru, called Malabar. He also creates amazing meals as the executive chef on the M/V Aqua, a ship that travels along the Amazon River. His goal is to show the world the delicious and unusual foods of Amazonian cuisine.

A Chef's Journey

Pedro Schiaffino's love for cooking took him all over the world. In 1997, he graduated from the famous Culinary Institute of America in New York. To learn even more, he traveled to Italy for his master's studies at the Italian Culinary Institute.

While in Italy, he trained with some of the best chefs. He worked in the kitchen of Dal Pescatore with Chef Nadia Santini and at Ristorante Pinocchio with Chef Piero Bertinotti. These experiences helped him become the creative chef he is today.

What makes Schiaffino's cooking special are the rare ingredients he uses. He travels deep into the Amazon rainforest to find unique flavors. He works with local communities to learn about traditional foods and bring them to his restaurant.

  • Aguaje: A fruit from the aguaje palm tree that has a slightly sour, fermented taste.
  • Giant Snails: A large type of snail found in the jungle.
  • Sacha Culantro: A wild type of coriander with a very strong flavor.
  • Paiche: One of the largest freshwater fish in the world, found in the Amazon River.
  • Quinoa: A healthy grain that has been grown in the Andes for thousands of years.
  • Herbs and Seasonings: He uses many local herbs like cedrón, toronjil, and muña to add fresh, unique tastes to his food.

Famous Dishes

Schiaffino combines these jungle ingredients to create unforgettable meals. His menu is always changing, but here are some examples of his creative dishes:

  • Tuna Brulé: A dish where tuna is lightly seared and served with a sour cocona-lime juice.
  • Scallop and Seaweed Salad: Fresh scallops mixed with wild caigua (a type of vegetable), Andean seaweed, and maca root.
  • Fish Ceviche: A classic Peruvian dish made with fresh fish cured in citrus juice, but with a twist using the juice of the tumbo fruit.
  • Paiche with Masato: A fillet of the giant paiche fish served with masato (a fermented yuca drink) and black tapioca.
