Pepper steak is a yummy dish that comes from China. It's made by quickly cooking thin slices of beef with colorful bell peppers. It also often includes bamboo shoots and other tasty things like soy sauce and ginger.
This dish is usually thickened with a little bit of cornstarch to make the sauce nice and smooth. Sometimes, cooks also add sliced onions and bean sprouts to the recipe.
Where Did Pepper Steak Come From?
Pepper steak has been enjoyed in the United States since at least 1948. But its true home is in Fujian cuisine, a style of cooking from the Fujian province in China.
In China, the original dish was called qīngjiāo ròusī. The main difference was that it traditionally used pork instead of beef. Also, the seasonings were usually lighter than what you find in today's pepper steak.

Similar dishes to the Chinese qīngjiāo ròusī (which means "green pepper shredded meat") are popular in other countries too:
- In Korean Chinese cuisine, there's a dish called gochu-japchae. It means "pepper japchae" and is a spicy version.
- In Japanese Chinese cuisine, you can find chinjao-rōsu. This is another tasty dish that uses green peppers and meat, similar to pepper steak.
