Pici is a special type of thick, hand-rolled pasta from Italy. It looks a bit like very fat spaghetti. This unique pasta comes from the province of Siena in Tuscany. In some areas, like Montalcino, people also call it pinci.
How Pici is Made
The dough for pici is usually very simple. It is often made only from flour and water. Sometimes, families might add a little egg to the dough. This depends on their own traditions. You can even find pici made with finely chopped spinach instead of water, which gives it a green color!
To make pici, the dough is rolled out into a thick, flat sheet. Then, it is cut into long strips. Each strip is then rolled by hand. Some people roll the dough between one palm and the table. Others roll the strip between both palms.
