Pyzy (['pɨzɨ] singular: pyza) are a yummy type of dumpling from Poland! They are often served as a main meal. These large, oval-shaped dumplings are a special part of Polish cuisine. The word "pyzy" is usually used for more than one dumpling, even though a single one is called a "pyza."
Potato Pyzy
Potato pyzy are made mostly from potatoes. Sometimes, they use raw potatoes, or a mix of raw and boiled ones. People might also add a little flour, eggs, and salt to the mix. These dumplings are then cooked in boiling water until they are ready to eat.
You can enjoy potato pyzy in different ways! They can be filled with tasty things like meat, a type of fresh cheese called twaróg, or even mushrooms. If they aren't stuffed, they are often served with crispy bacon, rich lard, or yummy fried onion.
Other dishes that are similar to potato pyzy include goły, kartacze, and Silesian dumplings.
Leavened Pyzy
Leavened pyzy are also known as pyzy drożdżowe. These dumplings are made from flour, milk, butter, sugar, and salt. Unlike potato pyzy, these use yeast to make them light and fluffy.
Leavened pyzy can be cooked in boiling water, much like another Polish dumpling called pampuchy. They can also be cooked using steam, which makes them very soft. Some old recipes even mention baking pyzy in an oven!
