How Reshteh Khoshkar Is Made
Preparing the Batter
First, a thin batter is made using rice flour. This batter is poured into a special container. This container has many small holes at the bottom. When the batter comes out, it looks like a fountain.
Making the Pastry Sheets
The container is then used to pour the batter onto a hot cooking surface, called a skillet. The person making it creates a cool pattern with the flowing batter. The heat from the skillet quickly cooks the batter. This turns it into a thin, patterned sheet of pastry.
Adding the Filling
Once the pastry sheet is ready, a delicious filling is added. This filling is usually made from crushed walnuts and sugar. Sometimes, other tasty ingredients are added too. The filling is placed right in the middle of the pastry sheet.
Folding and Frying
After the filling is in place, the pastry sheet is carefully folded. It is folded so that the filling is completely secure inside. Finally, these filled pastries are fried in hot oil. This makes them crispy and ready to eat.
