Silpancho is a super popular dish from Bolivia, especially from the city of Cochabamba. The name comes from the original Quechua word Sillp'anchu. It's a big, satisfying meal that gives you lots of energy. Imagine a plate with layers of yummy food!
It usually starts with a base of white rice. On top of the rice, you'll find sliced, boiled potatoes. Next comes a thin piece of pounded meat. Then, there's a layer of fresh, chopped tomato. Finally, a mix of onion, beet, and parsley is added. To top it all off, one or two fried eggs are placed on top.
How is Silpancho Made?
Silpancho is known for its many layers and fresh ingredients.
- First, a layer of white rice is spread on the plate.
- Next, boiled potatoes are sliced and placed over the rice.
- A thin piece of meat, often beef, is pounded flat and cooked. This meat goes on top of the potatoes.
- Then, fresh tomatoes are chopped and added.
- A mix of onion, beet, and parsley is sprinkled over everything.
- Finally, one or two fried eggs are placed on top to complete the dish.
Different Kinds of Silpancho
People sometimes make Silpancho in slightly different ways.
- Instead of a flat piece of meat, some people cut the meat into small pieces. These pieces are then cooked and mixed with the rice.
- Another way to change it is by using pico de gallo instead of the onion, beet, and parsley mix. Pico de gallo is a fresh salsa made with chopped tomatoes, onions, and chili peppers.
- Sometimes, the meat is marinated before cooking. This means it soaks in a special sauce, like soy sauce, to give it more flavor.
