Yeolmu-kimchi (Hangul: 열무김치), also known as young summer radish kimchi, is a special kind of Kimchi. Kimchi is a very popular side dish in Korea.
This type of kimchi is made from a plant called yeolmu radish. While the roots of this radish are small, its green leaves are thick and plentiful. These leaves are used to make yeolmu-kimchi especially during spring and summer. People often enjoy yeolmu-kimchi in the summer, especially with cold noodles.

How to Make Yeolmu-kimchi
Making yeolmu-kimchi involves a few simple steps. It's all about preparing the radish and mixing it with tasty spices.
Getting the Radish Ready
First, you need to prepare the yeolmu radish.
- Any old or damaged leaves are carefully removed.
- The roots are left whole, but their ends are trimmed.
- A knife is used to gently scrape the thick roots. This helps to remove all the soil.
- After cleaning, the radish is sprinkled with salt water.
Mixing the Ingredients
Once the radish is ready, it's time to mix everything together.
- The yeolmu is lightly washed and cut into pieces that are easy to eat.
- Next, green onions are cut diagonally.
- Garlic and ginger are mashed into a paste.
- Red pepper is sliced into small pieces.
- All these ingredients – the red pepper, mashed garlic, ginger, green onions, and shrimp sauce – are mixed with the young radish.
- Finally, a small amount of salt water is added to the mixture. This helps the flavors blend and the kimchi to ferment.
Why Yeolmu-kimchi is Popular
Yeolmu-kimchi is a favorite among many Koreans. In fact, it was once voted as a top choice!
On January 30, 2013, an online poll asked people about their favorite types of kimchi. This poll included 3,532 bloggers. Yeolmu-kimchi received 875 votes, which was about 24.8% of all votes. This made it the most popular kimchi, not counting Napa Cabbage Kimchi, which is the most common type. Another kimchi called Dongchimi came in second place with 13.9% of the votes.
